July 16 – An Important Day in History

On July 16, 1969, Apollo 11 was launched from the Cape Kennedy Space Center in what is now Cape Canaveral, FL. The launch heralded the first manned space flight that would culminate with astronauts walking on the moon.

An even more important event occurred 12 years before the launch of Apollo 11 – Marsha O’Connor was born! That’s right, Marsha celebrates her birthday today. We will be hosting a party for her at The Pioneer Campground at 11:00 a.m. Friends and family have been invited. Please join us in wishing Marsha a very happy birthday.

Blueberry Muffins

Prep Time: 20 Minutes
Ready In: 20 Minutes
Servings: 12

INGREDIENTS:
2 cups flour
3/4 cup sugar
1-1/2 tsp baking powder
1 teaspoon salt
1/2 tsp baking soda
1 egg
3/4 orange juice
1/4 cup canola oil
1-1/4 cups blueberries
1/4 cup light brown sugar

DIRECTIONS:
1. Preheat the oven to 400 degrees.
2. In a large bowl, combine flour, sugar, baking powder, salt, and baking soda.
3. In another bowl, beat together the egg, orange juice, and canola oil. Stir in the blueberries.
4. Make a well in the center of the flour mixture. Pour the blueberry mixture in all at once. Stir until moistened (the batter should be lumpy).
5. Spray muffin cups with baking spray. Fill each cup 2/3 full. Sprinkle the tops with the brown sugar.
6. Bake for 20 minutes or until golden. Remove from pans. Serve immediately.

July is National Blueberry Month

July was proclaimed National Blueberry Month by the United States Department of Agriculture on May 8th, 1999. Blueberries are grown in 35 states, and the United States produces over 90% of all of the blueberries in the world. They have been used in soups, stews and more, for centuries. According to Ark-LA-Tex, the Native Americans taught the pilgrims to use blueberries in many ways. The Native Americans believed blueberries were good for your health. Blueberry tea was brewed to help relax women during childbirth, leaves from the blueberry bush were used to make a blood purifier that was good for the kidneys, and blueberry juice was used for coughs.

One Act Play Look Who’s Knockin’ One Night Only

The Land Stewardship Project (LSP) will be presenting a public performance of Look Who’s Knockin’, a professionally-acted, one-act educational performance, at the Jon Hassler Theater on Saturday, March 19, 2011, at 7:30 pm. The 30-minute play raises questions of land ethics and the moral dilemma posed by wanting to get top dollar for selling one’s land while desiring to help the next generation of farmers get started farming.

Created out of numerous interviews and stories of both beginning and retiring farmers in recent years, the play uses humor, story-telling, and the common everyday tension in an elderly farm couple’s relationship to prompt personal reflection and community discussion in the audience.

The play was written by LSP Policy program organizer Doug Nopar and directed by LSP member Eva Barr. At each of the play performances, LSP will provide resources and first-step guidance for those landowners interested in learning more about renting or selling their land to a beginning farmer. Look Who’s Knockin’ and the discussion that follows will provide both the inspiration and the means for retiring landowners to begin to connect with aspiring, young, conservation-oriented farmers,” said Nopar.

Foods to Protect Your Vision (Part 2)

Spinach

A diet rich in spinach can help protect your macula (the center of the retina) from cell damage that can cause macular degeneration and cataracts. Dark, leafy greens such as spinach are rich in lutein, a carotenoid compound found in colorful fruits and vegetables.

Spinach is also rich in Vitamin A, which promotes healthy surface linings of the eyes; folate, a B vitamin which reduces anemia in pregnant women, helps manage heart health, and has been linked to reduction in colon and cervical cancer risk; iron; and Vitamin C.

Foods to Protect Your Vision (Part 1)

A study in the journal The Archives of Ophthalmology published in January of this year indicates fewer Americans are developing macular degeneration – a major cause of vision loss and blindness in older men and women. The study suggests a healthier diet that includes green leafy vegetables and fish could be one of the factors responsible for the decrease in the prevalence of the disease among people over the age of 40.

Foods can help defend against other vision related disorders including cataracts and glaucoma. The antioxidants and nutrients linked to a decreased risk of these disorders include: lutein, omega-3 fatty acids, Vitamin C, and Vitamin E.

March is Irish-American Heritage Month

In a federal proclamation, President Obama proclaimed March 2011 as National Irish-American Heritage Month. In making the proclamation, President Obama stated:

“Our diverse Nation has been shaped by the sacrifices and successes of those who crossed both land and sea in pursuit of a common dream. For millions of Americans, this journey began in Ireland. In the wake of the Great Hunger, many sons and daughters of Erin came to our shores seeking a brighter day, with only courage and the enduring values of faith and family to sustain them. Alongside many others who sought a better life in a new Nation, these intrepid immigrants built strong communities and helped forge our country’s future. During Irish-American Heritage Month, we honor the contributions Irish Americans have made, and celebrate the nearly 40 million among us who proudly trace their roots back to Ireland.

From the earliest days of our Republic, the Irish have overcome discrimination and carved out a place for themselves in the American story. Through hard work, perseverance, and patriotism, women and men of Irish descent have given their brawn, brains, and blood to make and remake this Nation — pulling it westward, pushing it skyward, and moving it forward. Half a century ago, John F. Kennedy became our first Irish-American Catholic President and summoned an expectant citizenry to greatness. This year, as we commemorate the 50th anniversary of President Kennedy’s inauguration, we recognize our 35th President and the countless other Irish Americans whose leadership and service have steered the course of our Nation.

Seldom in this world has a country so small had so large an impact on another.
